It's been a while since I posted a menu plan for the week. There are a couple reasons for this, one being that we have been incredibly busy including the fact that hubby and I started an ASL class once a week for the next 15 weeks organized through a friend. We have also all been sick with a cold.
During that time though I did come up with a plan for our meal plan going forward. We have a number of tried and true recipes that we love that I am looking to build on to give us a robust list of go to meals/side dishes/breakfasts, etc to rely on. From there I am just going to use those well loved recipes to rotate through our meals plans, perhaps adding one new recipe to try once a week to add to our list.
I am trying to simplify things and while I enjoy cooking (and eating) new and different foods not everyone in my family does. Especially the picky 8 year old, although lately I have been able to find some soups that she likes such as this potato and cheddar bacon soup that got added to our list last week. Going forward with this list I will know that each meal I have planned has been approved by her already and should lesson the dinner time issues over not wanting to eat.
For this week, I am happy to get back to regular meals after all the sickness in the house since this cold left those of us sick exhausted so meals were very thrown together and often late.
Monday -Frito Chicken strips and oven fries with salad. I was looking for a better gluten free coating for our chicken strips and thought why not try corn chips.
Tuesday -Crock pot cheeseburger soup - Tuesday is our ASL class night and while I get off work early it's nice to have dinner cooking away during day so that we can focus on getting all regular evening stuff done before we leave like homework, lunches, etc. I am pretty sure we tried this before and liked it but wanted to try it again in the hopes it will make our regular list of meals!
Wednesday- Smoked salmon pate pasta with Asparagus and salad -I have a parent coffee night to attend this evening as President of the Deaf and Hard of Hearing Society so we will be having a quick and easy pasta dinner with salad. Every year we buy this salmon pate that comes frozen at a special Christmas Market and while it's great on crackers this year they also suggested just boiling up pasta and mixing in the salmon pate to the pasta once cooked so I am going to give it a try.
Thursday - Leftovers or cereal - Hubby and I have a 5pm appointment meaning the kids will eat dinner on their own and we will eat once we get home so quick and easy it is for tonight!
Friday - Salmon/Quinoa/Vegetable - Karensa will be off at a sleepover so the plan is to have Salmon, quinoa and veggies of some kind since lately she has not been liking salmon that much so it's a great meal for when she is not home.
Saturday - To be determined
Sunday - To be determined
