We have a fairly busy week so I am glad I took the time to sit down and come up with a meal plan to limit the chaos of meal time at least! As usual when I make a meal plan I have linked up over at Organizing Junkie as part of Menu Plan Monday.
Monday - Normally I take the time to cook us a nice meal without convenience items but on busy nights like tonight we need something fast and easy. We found Johnny's potato/cheddar powder soup mix at Costco recently and really liked it. Grilled cheese will be made for the picky child eater.
Thursday- We will use the leftover chicken from Wednesday night to make salads. We have spinach in the fridge and in addition to the chicken will add in cucumbers, peppers, dried cranberries. I like adding some mushrooms to mine and have some feta cheese in the fridge so will throw some of that in too. I like that each member of the family can customize their salad as I simply put the spinach out with bowls of cut up vegetables/toppings.
