Menu Plan Monday February 17/2014

Here is hoping that we are not coming down with the flu now as my stomach felt a bit off tonight. Hence the quickly thrown together dinner of Tortellini, something that the kids love!

Monday: Tortellini with Alfredo sauce. Side of cucumbers for kids and sauteed mushrooms for adults. Not gluten free but quick and easy. I didn't eat much of it anyway.
Tuesday:  Tuna Curry with rice and peas. Substituted with rice flour to make it gluten free and evaporated milk since I don't have half and half on hand. I made this recently for a friend while her baby was in the hospital and even her pickiest child loved it!
Thursday:  Fettuccine with creamy tomato sauce. Salad on side.
Friday:  Crock Pot Chicken, mashed Potatoes and carrots.
Saturday:  Mashed potato stuffed Hot dogs. Making use of leftover mashed potatoes from day before. Served with Cantaloupe.
Sunday:  To be determined

Nathan has been asking for something different for breakfast besides cereal and toast so if we have time this weekend I am thinking we will find a muffin recipe to make. We already have a meeting for the Hearing Society on Saturday and Nathan has a private swim lesson that evening. On Sunday we might have a play date in the morning, leaving our afternoon free for some baking time.

  1. The tuna curry sounds amazing. How did it turn out or is it a regular at your place? Do you find it difficult to make things gluten free?

    I hope that you're over your sickness. Our family was sick for three weeks. It sure gets tiring. Literally and figuratively.

    1. Hey Sarah, The kids and I love this dish! My husband not so much, but he is a regular old meat and potatoes type person. As for making things gluten free, if you stick to the basics like rice, meat, fruit and veggies it is easy and buy gluten free pasta, soy sauce etc. And it is easy to sub in flours for recipes like this. For baking I like Pamelas baking mix or this gluten free flour mix I found at Costco. I do have a bunch of different gluten free flours I keep on hand too. This is one of my favourite sources for gluten free recipes online: http://www.thebakingbeauties.com/. And yes, thankfully we are over being sick now!!!
