Slow Cooker Lasagna Soup

Did you know that January is Slow Cooker Month? Neither did I until a few days ago although we use ours at least once or twice a week during the winter months. While I am dreaming of summer, sunshine, camping and barbecued foods, I still have another couple of months of cold, snowy weather to endure so I may as well embrace it.

And since nothing is better on a cold day than a nice hot meal, I have truly embraced using our slow cooker to ease the dinner time madness. I love that I can prep meals the night before and then simply place in the cooker to simmer away all day.

This week I tried a new recipe, Slow Cooker Lasagna Soup. I absolutely love lasagna but not all the prep that goes into it for a weeknight meal.

Slow Cooker Lasagna Soup

  • 1 pound ground beef
  • 3 cups beef broth
  • 4 teaspoons minced garlic
  • 1 Tablespoon dried parsley
  • 1 Tablespoon dried basil
  • 1/2 cup chopped onion
  • 28 ounces diced tomatoes
  • 6 ounces tomato pasta {I used 5.5 ounces since that's the size of the can's sold here in Canada}
  • 1 cup tomato juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2-3 cups spinach leaves, fresh or frozen {I used frozen since I froze half the bag we bought last week so it wouldn't go to waste}
  • 6 sliced mushrooms
  • 2 cups uncooked broken lasagna noodles {or small pasta shapes such as shells}
  • 1cup water {optional - I did not use this and it made for a thicker soup which the kids like}


Place ingredients in slow cooker, all except water and pasta. Cover and cook on low for 7-8 hours or on high for 4-5 hours. When approximately 30 minutes remain, pasta and water if using. Stir, replace cover and cook for 30 additional minutes.
