WW: Springrolls Recipe
How to make:
A Filipino co-worker of mine taught me how to make these and we love them! First I was not given a recipe when learned she just had me over and showed me so here is what I used for these. I buy 50 spring roll wrappers in freezer section of grocery store and take them out to defrost when start cooking mixture. It takes about 1kg of frozen mixed veggies, some soy sauce and 1 small to medium diced onion depending on how much you like onion. Sauté onion until clear, adding some soy sauce and pepper to season. Add in mixed veggies and more soy sauce as needed so veggies don't dry out and stick to bottom of pan. Once veggies are heated through I add a bit more soy sauce if needed and put in fridge to cool.
Once mixture is cool, use about 2 TBLS per wrapper and roll according to instructions on wrapper packaging. I seal the edges with beaten egg. Lay damp tea towel over wrappers so they won't dry out. Once down, heat oil in frying pan and fry till nicely browned.
Enjoy, I made these today for son's Christmas pot luck and this is my go-to pot luck dish when I have enough time to make them. I usually cook the veggies one night then roll them the next and fry the next morning.
